Ingredients

  • 2 cups of long-grain rice
  • 1 can (14 oz) of crushed tomatoes
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 scotch bonnet pepper, seeded and minced
  • 2 teaspoons of smoked paprika
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried thyme
  • 1 teaspoon of curry powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 cups of vegetable or chicken broth
  • 1 cup of coconut milk
  • 4 ripe plantains, peeled and sliced
  • Vegetable oil, for frying

Instructions

  1. Rinse the rice under cold water until the water runs clear. Set aside.

  2. In a large pot, heat some oil over medium heat. Add the diced onion, minced garlic, and diced bell peppers. Cook until softened, about 5 minutes.

  3. Stir in the crushed tomatoes, minced scotch bonnet pepper, smoked paprika, ground cumin, dried thyme, curry powder, salt, and black pepper. Cook for another 2-3 minutes to allow the flavors to meld together.

  4. Add the rinsed rice to the pot and stir to coat it in the spice mixture. Pour in the vegetable or chicken broth and coconut milk. Bring to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 20 minutes or until the rice is cooked and tender.

  5. While the rice is cooking, heat vegetable oil in a separate frying pan over medium-high heat. Fry the sliced plantains in batches until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

  6. Once the rice is cooked, fluff it with a fork and serve hot, garnished with the coconut-fried plantains.
