How To Make Lighter Massaman Chicken Curry

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp Massaman curry paste
  • 1 can (14 oz) reduced-fat coconut milk
  • 1 cup low-sodium chicken broth
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 sweet potatoes, peeled and cubed
  • 1 onion, thinly sliced
  • 1 red bell pepper, seeded and sliced
  • 1 tbsp vegetable oil
  • 1 tbsp lime juice
  • Fresh cilantro, for garnish
  • Steamed rice, for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the Massaman curry paste and cook for 1 minute, until fragrant.

  2. Add the chicken pieces to the pot and cook until browned on all sides.

  3. Stir in the coconut milk, chicken broth, fish sauce, and brown sugar. Bring to a simmer.

  4. Add the sweet potatoes, onion, and red bell pepper to the pot. Cover and cook for 20 minutes, or until the chicken is cooked through and the sweet potatoes are tender.

  5. Stir in the lime juice.

  6. Serve the Lighter Massaman Chicken Curry over steamed rice and garnish with fresh cilantro.
