How To Make Moroccan Freekeh Traybake

Ingredients
- 1 cup of freekeh
- 2 cups of vegetable broth
- 1 onion, diced
- 2 bell peppers, sliced
- 2 carrots, sliced
- 1 zucchini, sliced
- 2 cloves of garlic, minced
- 2 tbsp of olive oil
- 1 tsp of cumin
- 1 tsp of paprika
- 1/2 tsp of turmeric
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

Preheat oven to 400°F (200°C).

In a large baking dish, combine freekeh with vegetable broth.

Add diced onion, sliced bell peppers, carrots, zucchini, minced garlic, olive oil, cumin, paprika, turmeric, salt, and pepper. Mix well.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and stir the ingredients. Bake for an additional 15 minutes or until the freekeh is cooked and the vegetables are tender.

Garnish with fresh parsley and serve hot.
