How To Make Easy One-Pot Chicken Casserole

Ingredients
- 1.5 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot or Dutch oven, heat some oil over medium heat. Add the diced onion and minced garlic, and cook until fragrant.

Add the chicken pieces to the pot and cook until browned on all sides. Season with salt and pepper.

Stir in the sliced carrots and diced potatoes, followed by the cream of mushroom soup and chicken broth. Mix well to combine.

Sprinkle in the dried thyme and dried rosemary, and give everything a good stir. Bring to a simmer.

Cover the pot and let the casserole simmer for about 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.

Adjust the seasoning if needed. Serve hot, garnished with fresh chopped parsley.
