Ingredients
- 2 boneless, skinless chicken breasts, cooked and shredded
- 2 tbsp olive oil
- 4 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 small onion, diced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- 4 large flour tortillas
Instructions

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Add the diced red bell pepper and onion to the skillet. Cook until vegetables are softened, about 5 minutes.

Stir in the shredded chicken and cook for an additional 2 minutes, until heated through.

In a small bowl, mix together the mozzarella cheese, Parmesan cheese, mayonnaise, sour cream, and chopped cilantro.

Spread a quarter of the cheese mixture onto one side of each flour tortilla.

Spoon a quarter of the chicken and vegetable mixture onto one side of each tortilla, on top of the cheese mixture.

Fold the tortillas in half to form quesadillas.

Heat a large skillet or griddle over medium heat. Cook each quesadilla for 2-3 minutes on each side, until golden brown and crispy.

Remove from heat and let cool for a few minutes before slicing into wedges.
