Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 bunch of asparagus, trimmed
  • 8 ounces of mushrooms, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of chicken broth

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat.

  2. Season the chicken breasts with salt, pepper, and dried thyme.

  3. Add the chicken to the skillet and cook for 5-6 minutes per side, until browned and cooked through. Remove from the skillet and set aside.

  4. In the same skillet, add the garlic and mushrooms. Cook for 3-4 minutes, until the mushrooms are tender.

  5. Push the mushrooms to one side of the skillet and add the asparagus. Cook for 5 minutes, until the asparagus is tender-crisp.

  6. Stir the mushrooms and asparagus together in the skillet.

  7. Pour in the chicken broth and bring to a simmer. Cook for 2 minutes.

  8. Return the chicken breasts to the skillet and cook for an additional 2 minutes, until heated through.

  9. Serve the chicken, asparagus, and mushrooms together in the skillet.
