How To Make Chicken Arrabbiata Stew & Parmesan Dumplings

Ingredients
- 1.5 lbs of chicken thighs, boneless and skinless, cut into chunks
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 2 tsp of dried oregano
- 1 tsp of dried red chili flakes
- 1 can (14 oz) of diced tomatoes
- 2 cups of chicken broth
- Salt and pepper to taste
- 1 cup of all-purpose flour
- 1/2 cup of grated parmesan cheese
- 2 tsp of baking powder
- 1/2 cup of milk
- 2 tbsp of fresh parsley, chopped
Instructions

In a large pot, heat some oil over medium heat. Add the chicken and cook until browned on all sides. Remove from the pot and set aside.

In the same pot, add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.

Add the dried oregano and red chili flakes. Stir for a minute.

Add the diced tomatoes and chicken broth. Bring to a simmer.

Return the chicken to the pot and season with salt and pepper. Cover and simmer for 30 minutes.

In a mixing bowl, combine the flour, parmesan cheese, baking powder, and a pinch of salt. Gradually add the milk and mix until a sticky dough forms.

Drop spoonfuls of the dough onto the simmering stew. Cover and cook for 15 minutes, until the dumplings are cooked through.

Serve the stew with the dumplings and garnish with fresh parsley.
