How To Make Low Fat Strawberry Scones
These strawberry scones are a great way to use freshly harvested strawberries! It’s a tasty and healthy treat to help you start your day right.

Ingredients
- 1cupfresh strawberries,cut into small pieces
- 1cupall purpose flour
- 1cupwhole wheat flour
- ¼cupsugar,plus 1 tsp for topping
- ¼tspsalt
- 2tspbaking powder
- ¼cupbutter,frozen, half stick
- ¾cupsbuttermilk,cold, 1% light
- 1tspvanilla
Instructions

Preheat the oven to 400 degrees F.

Mix the strawberries with 1 tablespoon of sugar, then set aside.

In a large bowl, mix the all purpose flour, whole wheat flour, sugar, salt, and baking powder.

Using the large holes of a cheese grater, grate the frozen butter into the flour.

Mix well with the flour.

In a medium bowl, mix the buttermilk and vanilla.

Using a fork, slowly stir in the wet ingredients to the dry ingredients, until all the mixture is moistened. Do not over work the dough.

Fold in the strawberries.

Line a cookie sheet with a Silpat or parchment paper.

Drop 8 equal large spoonfuls onto the cookie sheet.

Bake in the center rack for 18 minutes.

Remove and let cool for about 5 minutes.
