Ingredients

  • 500g fresh strawberries, hulled and halved
  • 250g granulated sugar
  • 60ml Pimm’s No. 1
  • Juice of 1 lemon
  • 1 tsp lemon zest

Instructions

  1. In a large saucepan, combine the strawberries, sugar, Pimm’s, lemon juice, and lemon zest.

  2. Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar has dissolved.

  3. Reduce the heat to low and continue to simmer for about 20-25 minutes, until the jam has thickened and reaches the desired consistency.

  4. Remove from heat and let cool for 5 minutes.

  5. Transfer the jam into sterilized jars and seal tightly.

  6. Allow the jam to cool completely before storing in the fridge.
