  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/4 cup melted butter
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.

  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.

  3. In a separate bowl, mix together the buttermilk and melted butter.

  4. Pour the buttermilk mixture into the flour mixture and stir until just combined. Fold in the raisins, if desired.

  5. Divide the batter evenly among the muffin cups.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
