Ingredients

  • 3large tomatoes,ripe, chopped
  • 8ozsmall mozzarella balls,fresh, halved
  • 10medium basil leaves,chopped
  • 1garlic clove,minced
  • 2tbspparsley,fresh, chopped
  • 2tbspextra virgin olive oil
  • 2tspred wine vinegar
  • salt and pepper
  • 1large baguette,or Italian bread, sliced 1-inch thick
  • 1large garlic clove,fresh, minced

Instructions

  1. Combine the tomatoes, basil, parsley, mozzarella, olive oil, red wine vinegar, garlic, and a dash of salt and pepper.

  2. Allow to sit at room temperature.

  3. Place the bread slices under the broiler for 1 to 2 minutes or until the bread is very lightly toasted.

  4. Immediately after removing the bread from the oven, rub the garlic clove over each slice.

  5. Top the bread slices with ¼ cup of the tomato and mozzarella mixture.

  6. Serve, and enjoy!
