How To Make Peaches, Burrata & Prosciutto Salad

Taking inspiration from Caprese salad, this prosciutto salad is loaded with creamy burrata, juicy peaches, and loads of basil.

Ingredients

  • 2tbsppine nuts
  • 3yellow peaches,pitted and sliced into wedges
  • 8ozburrata cheese,torn into chunks
  • 2ozprosciutto,torn into long strips
  • ¾cupfresh basil leaves,loosely packed
  • ½tspsalt
  • freshly ground black pepper,to taste
  • 2tbspextra virgin olive oil
  • 2tbspwhite balsamic vinegar

Instructions

  1. Place the pine nuts in a small skillet over medium heat. Cook, stirring constantly, until golden brown in spots, a few minutes.

  2. Transfer to a small bowl and let cool.

  3. Arrange the peaches and prosciutto on a platter. Top with the burrata and basil.

  4. Sprinkle with salt and pepper, and then drizzle with oil and vinegar. Sprinkle the pine nuts over top and serve.
