How To Make Beef and Quinoa Casserole Recipe

A hearty and nutritious casserole made with lean beef, quinoa, vegetables, and cheese.

Ingredients

  • 1 lb ground beef
  • 1 cup quinoa, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables, such as carrots, green beans, and corn
  • 1 can tomato sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, brown the ground beef over medium heat. Drain off excess fat.

  3. Add the onion and garlic to the skillet and sauté until softened.

  4. Add the mixed vegetables, tomato sauce, quinoa, salt, and pepper to the skillet. Stir to combine.

  5. Transfer the mixture to a 9×13 inch casserole dish and spread evenly.

  6. Sprinkle the shredded cheese over the top of the casserole.

  7. Bake for 35-40 minutes, or until the cheese is melted and the casserole is heated through.
