  • 1 lb venison loin
  • 1 tbsp olive oil
  • Salt and pepper
  • 1 cup blueberries
  • 1/4 cup red wine
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat oven to 400°F.

  2. Season venison with salt and pepper. Heat olive oil in oven-safe skillet over medium-high heat.

  3. Sear venison on all sides until browned.

  4. Transfer skillet with venison to oven and bake for 10-15 minutes or until desired doneness is reached.

  5. In a small pot, combine blueberries, red wine, honey, and balsamic vinegar.

  6. Bring mixture to a simmer and cook until blueberries have broken down and sauce has thickened.

  7. Serve venison sliced with blueberry sauce drizzled over top.
