How To Make Shearers’ Mince and Potato Hot Pot

Ingredients
- 500g minced beef
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 potatoes, peeled and sliced
- 400g canned diced tomatoes
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

Preheat the oven to 180°C (350°F).

In a large skillet, brown the minced beef over medium heat. Remove from the skillet and set aside.

In the same skillet, sauté the onion and garlic until softened.

Add the diced carrots and cook for another 2 minutes.

Stir in the canned diced tomatoes, beef broth, Worcestershire sauce, dried thyme, dried rosemary, salt, and pepper. Bring to a simmer.

Add the browned minced beef back into the skillet and mix well.

Transfer the mixture to a casserole dish and arrange the sliced potatoes on top.

Cover the casserole dish with foil and bake in the preheated oven for 1 hour.

After 1 hour, remove the foil and continue baking for another 30 minutes, or until the potatoes are golden and cooked through.

Garnish with chopped fresh parsley before serving.
