  • 1 can chickpeas, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 red onion, chopped
  • 1 bell pepper, chopped
  • 1/2 cup chopped parsley
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 2 teaspoons honey
  • salt and pepper to taste

Instructions

  1. In a large bowl, mix together the drained and rinsed beans, chopped red onion, bell pepper, and parsley.

  2. In a small bowl, whisk together the apple cider vinegar, olive oil, honey, salt, and pepper.

  3. Pour the dressing over the bean mixture and toss until well combined.

  4. Chill in the refrigerator for at least 1 hour before serving.
