How To Make Legume and Vegetable Stir-Fry

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, sliced
  • 2 bell peppers, sliced
  • 2 garlic cloves, minced
  • 1 zucchini, sliced
  • 1 cup green beans, trimmed and halved
  • 1 can chickpeas, drained and rinsed
  • 1 tbsp soy sauce
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a wok or large skillet over high heat.

  2. Add onion and bell peppers and stir-fry for 2-3 minutes.

  3. Add garlic, zucchini, and green beans and stir-fry for 3-4 minutes.

  4. Add chickpeas and soy sauce and stir-fry for 2-3 minutes until heated through.

  5. Season with salt and pepper to taste.
