Ingredients
- 1 tbsp olive oil
- 1 red onion, sliced
- 2 bell peppers, sliced
- 2 garlic cloves, minced
- 1 zucchini, sliced
- 1 cup green beans, trimmed and halved
- 1 can chickpeas, drained and rinsed
- 1 tbsp soy sauce
- Salt and pepper, to taste
Instructions

Heat olive oil in a wok or large skillet over high heat.

Add onion and bell peppers and stir-fry for 2-3 minutes.

Add garlic, zucchini, and green beans and stir-fry for 3-4 minutes.

Add chickpeas and soy sauce and stir-fry for 2-3 minutes until heated through.

Season with salt and pepper to taste.
