Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can chickpeas, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add diced onion and sauté until softened.

  3. Add in diced bell pepper and sauté for another 2-3 minutes.

  4. Drain and rinse the legumes, then add them to the skillet.

  5. Add in cumin, chili powder, paprika, salt, and pepper. Stir to combine.

  6. Cover the skillet and let cook for 20-25 minutes, or until the legumes are heated through and the flavors have melded together.

  7. Serve hot and enjoy!
