How To Make Legume Casserole Recipe

A hearty and healthy casserole packed with protein and fiber-rich legumes, perfect for a comforting meal.

Serves:

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 can of kidney beans, drained and rinsed
  • 1 yellow onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can of diced tomatoes
  • 1 tsp of dried oregano
  • 1 tsp of dried basil
  • Salt and pepper to taste
  • 1 cup of shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, sauté onion and garlic until fragrant and translucent.

  3. Add in both bell peppers and sauté until tender.

  4. Stir in the three cans of beans, diced tomatoes, oregano, basil, salt, and pepper. Cook until heated through.

  5. Pour the mixture into a large casserole dish.

  6. Sprinkle the shredded cheddar cheese over the top of the mixture.

  7. Cover with foil and bake for 30 minutes.

  8. Remove the foil and bake for another 15-20 minutes until the cheese is melted and bubbly.

  9. Serve hot.
