How To Make Legume and Quinoa Salad Recipe
A nutritious and flavorful salad with an array of legumes, quinoa, and vegetables.

Ingredients
- 1 cup quinoa
- 1 can chickpeas, drained
- 1 can black beans, drained
- 1 red bell pepper, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped parsley
- 1/2 cup chopped cilantro
- 1/2 cup chopped green onions
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- Salt and freshly ground black pepper, to taste
Instructions

Rinse quinoa and cook according to package instructions.

While quinoa is cooking, prepare the salad ingredients by combining chickpeas, black beans, bell pepper, cherry tomatoes, parsley, cilantro, and green onions in a large bowl.

In a separate bowl, mix together olive oil, lemon juice, garlic, salt, and black pepper to make the dressing.

Once quinoa is cooked, add it to the salad bowl and toss everything together.

Drizzle dressing over the salad and toss to coat everything evenly.
