  • 2 cans (15 oz) chickpeas, drained and rinsed

  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1/2 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • Salt and black pepper to taste

Instructions

  1. In a large mixing bowl, combine chickpeas, cucumber, red onion, red bell pepper, and parsley.

  2. In a separate bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper to make the dressing.

  3. Pour the dressing over the chickpea mixture and toss to coat.

  4. Chill in the refrigerator for at least 30 minutes before serving.
