Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 oz) can diced tomatoes
  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1 (5 oz) package baby spinach
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

  2. Add the cumin, smoked paprika, and cayenne pepper, and cook for an additional minute.

  3. Stir in the diced tomatoes, chickpeas, and vegetable broth. Simmer for 20 minutes.

  4. Add the baby spinach and continue simmering until the spinach is wilted.

  5. Season with salt and pepper to taste. Serve with lemon wedges.
