  • 1 can of chickpeas, drained and rinsed
  • 1 avocado, diced
  • 1/4 red onion, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, avocado, red onion, bell pepper, and cilantro.

  2. Squeeze lime juice over the mixture and toss until evenly coated.

  3. Season with salt and pepper to taste.

  4. Serve immediately.
