How To Make Chickpea and Tomato Soup Recipe

A hearty and healthy soup packed with fiber-rich chickpeas and juicy tomatoes.

Serves:

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 2 large tomatoes, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups of vegetable broth
  • 1 tsp of cumin
  • 1 tsp of paprika
  • 1 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot and add onion and garlic, saute until fragrant.

  2. Add chopped tomatoes, cumin, paprika, salt and pepper and stir.

  3. Add chickpeas and vegetable broth and bring to a boil. Simmer for 20-25 minutes.

  4. Blend soup with an immersion blender until smooth.

  5. Serve hot and garnish with fresh herbs.
