Ingredients

  • 1 cup chickpea flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/2 cup water
  • 1 tbsp olive oil
  • 1/4 cup chopped scallions

Instructions

  1. In a large mixing bowl, whisk together chickpea flour, salt, pepper, paprika, and cumin.

  2. Slowly add water while whisking until batter is smooth and thick.

  3. Heat olive oil in a nonstick skillet over medium-high heat.

  4. Pour 1/4 cup of batter onto the skillet and spread it into a circle using a spoon or spatula.

  5. Sprinkle a tablespoon of chopped scallions on top of the pancake.

  6. Cook for 2-3 minutes on each side until golden brown.

  7. Repeat with remaining batter and scallions.

  8. Serve hot and enjoy!
