How To Make Chickpea and Vegetable Stir-fry

A delicious and healthy vegetable stir-fry with protein-packed chickpeas.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat oil in a large skillet over medium heat.

  2. Add onions and bell peppers, sauté for 5 minutes.

  3. Add garlic, chickpeas, soy sauce, cumin, salt, and pepper and stir until heated through (about 5 minutes).

  4. Garnish with fresh cilantro and serve.
