How To Make Black Bean and Rice Stuffed Peppers Recipe
Delicious and healthy stuffed peppers packed with black beans and rice.

Ingredients
- 4 large bell peppers
- 1 cup cooked brown rice
- 1 can black beans, drained and rinsed
- 1/2 cup frozen corn
- 1/2 cup diced tomatoes
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/4 tsp cumin
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
Instructions

Preheat oven to 375°F.

Cut the tops off the bell peppers and remove the seeds and membranes.

In a large bowl, mix together rice, black beans, corn, tomatoes, garlic powder, chili powder, cumin, salt, and pepper.

Stuff the mixture into each bell pepper and top with shredded cheese.

Place the stuffed peppers in a baking dish and cover with foil.

Bake for 30-40 minutes or until peppers are tender and cheese is melted.
