How To Make Black Bean Soup
A hearty and comforting soup made with black beans, vegetables, and aromatic spices.
Serves:
Ingredients
- 2 cans of black beans, rinsed and drained
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, chopped
- 1 jalapeño pepper, seeded and minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 cups of vegetable or chicken broth
- Salt and black pepper to taste
- Toppings: chopped cilantro, sour cream, shredded cheese, sliced avocado, lime wedges, tortilla chips
Instructions

In a large pot over medium heat, add some oil and sauté the onion, garlic, red bell pepper, and jalapeño pepper until softened, stirring occasionally.

Add the spices and cook for 1-2 minutes until fragrant.

Add the black beans and broth, bring to a boil, then reduce heat and let simmer for 25-30 minutes until the vegetables are tender and the flavors have blended together.

Using an immersion blender or a blender, puree the soup until it’s smooth and creamy, then season with salt and black pepper to taste.

Serve hot, topped with chopped cilantro, sour cream, shredded cheese, sliced avocado, lime wedges, and crushed tortilla chips.
