  • 2 cups cooked black beans

  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 4 large tortillas
  • 1 cup shredded cheese (optional)
  • Fresh cilantro, for garnish
  • Salsa, sour cream, guacamole (optional toppings)

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the diced onions, bell peppers, and garlic. Cook until onions are translucent.

  2. Add the cooked black beans, diced tomatoes, cooked rice, cumin, chili powder, paprika, salt, and pepper to the skillet. Stir well to combine and cook for a few more minutes until heated through.

  3. Warm the tortillas in a separate pan or microwave for a few seconds to make them pliable.

  4. Divide the black bean mixture evenly among the tortillas, placing the filling in the center. If using cheese, sprinkle it over the filling.

  5. Roll up the burritos by folding in the sides and tightly rolling from the bottom to the top.

  6. If desired, heat a large skillet or grill pan over medium heat. Lightly spray or brush the burritos with oil and cook on each side until crispy and golden brown, about 2-3 minutes per side.

  7. Serve the black bean burritos with fresh cilantro and your favorite toppings such as salsa, sour cream, or guacamole.
