- 1 can of black-eyed peas, drained and rinsed
- 1/2 red onion, finely chopped
- 1/2 red bell pepper, finely chopped
- 1 jalapeno, seeded and finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 tablespoons of red wine vinegar
- Salt and pepper to taste
- Tortilla chips for serving
Instructions

In a medium bowl, combine the black-eyed peas, red onion, red bell pepper, jalapeno, and garlic.

In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

Pour the dressing over the black-eyed pea mixture and gently toss to combine.

Allow the flavors to marinate for at least 10 minutes.
