How To Make Asparagus and Swiss Cheese Frittata

Made with eggs, cheese, shallots, and asparagus, this is an easy recipe that makes a terrific Swiss Cheese Frittata in hardly any time at all.

Cooking: 35 minutes
Total: 45 minutes

  • ½lbasparagus,tough ends trimmed off

  • 5egg whites,large
  • 1tbsp1% milk
  • 2tbspfresh grated pecorino romano

  3. Heat butter in a 10-inch oven-safe skillet over medium heat. Stir in shallots and saute for about 4 to 5 minutes until golden.

  4. In a medium bowl, whisk eggs, egg whites, grated cheese, milk, salt, and pepper. Add the swiss cheese and mix well.

  5. Add eggs to the skillet making sure eggs cover the asparagus. Cook on medium for about 4 minutes, until the edges begin to set.

  6. Move the skillet to oven. Cook for about 16 to 18 minutes or until frittata is completely cooked.

  7. Cut into 4 to 6 equal wedges. Serve hot.
