Ingredients

  • 8 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup crumbled goat cheese
  • 1/2 cup asparagus spears, cut into 1-inch pieces
  • 1 tablespoon butter

Instructions

  1. Preheat broiler to high.

  2. In a large bowl, whisk together the eggs, salt, and pepper.

  3. Heat butter in a large non-stick skillet over medium heat. Add asparagus and cook until tender, about 5 minutes.

  4. Pour egg mixture into the skillet and cook until the edges start to set, about 3-4 minutes.

  5. Sprinkle the goat cheese evenly over the top of the frittata.

  6. Place skillet under the broiler and broil until the top is golden brown and the eggs are set, about 5-6 minutes.

  7. Let the frittata cool for a few minutes before slicing and serving.
