How To Make Slow Roasted Rabbit

Ingredients
- 1 whole rabbit, cleaned and dressed
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 4 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 275°F (135°C).

Place the rabbit in a roasting pan and rub it with olive oil, garlic, rosemary, thyme, salt, and pepper.

Cover the pan tightly with aluminum foil.

Roast the rabbit in the preheated oven for 2 hours.

Remove the foil and increase the oven temperature to 400°F (200°C).

Roast for an additional 20 minutes to brown the rabbit.

Remove from the oven and let it rest for 10 minutes before carving.
