Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 3 garlic cloves, minced
- 2 cups cooked white beans
- 1 rabbit, cut into pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1 tablespoon fresh rosemary, chopped
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion and carrots, and cook until softened, about 5 minutes.

Add the garlic and white beans, and cook for an additional 2 minutes.

Season the rabbit pieces with salt and pepper, then add them to the pot. Cook until the rabbit is browned on all sides, about 5 minutes.

Add the chicken broth and rosemary to the pot, then bring to a simmer. Cover and cook for 1 hour and 30 minutes, or until the rabbit is tender.
