Ingredients

  • 4 duck legs
  • 4 cups duck fat
  • 4 cloves garlic, crushed
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Season duck legs with salt and pepper.

  2. In a deep oven-safe dish, arrange duck legs in a single layer.

  3. Add crushed garlic and thyme sprigs over the duck legs.

  4. Pour duck fat over the duck legs, making sure they are fully submerged.

  5. Cover the dish with foil and refrigerate overnight.

  6. Preheat oven to 325°F (160°C).

  7. Remove duck legs from the fat and pat them dry.

  8. Heat a large skillet over medium heat and sear the duck legs, skin side down, until golden brown.

  9. Transfer the seared duck legs to a baking dish and roast in the preheated oven for 3 hours.

  10. Increase the oven temperature to 400°F (200°C) and cook for an additional 1 hour, or until the skin is crispy.

  11. Serve the duck confit hot and enjoy.
