How To Make Bulgur and Eggplant Pilaf
A delicious and healthy dish made with bulgur, eggplant and spices.
Serves:
Ingredients
- 1 cup bulgur
- 2 cups water
- 1 medium eggplant, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cinnamon
- Salt, to taste
- Black pepper, to taste
Instructions

Rinse the bulgur and soak it in cold water for 10 minutes. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes.

Add the eggplant and cook for 5-7 minutes until soft.

Add the spices and season with salt and black pepper.

Add the bulgur and water and stir well. Cover and simmer for 15-20 minutes until the water is absorbed and the bulgur is cooked.

Serve hot and enjoy!
