How To Make Bulgur and Eggplant Pilaf

A delicious and healthy dish made with bulgur, eggplant and spices.

Serves:

Ingredients

  • 1 cup bulgur
  • 2 cups water
  • 1 medium eggplant, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Rinse the bulgur and soak it in cold water for 10 minutes. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes.

  3. Add the eggplant and cook for 5-7 minutes until soft.

  4. Add the spices and season with salt and black pepper.

  5. Add the bulgur and water and stir well. Cover and simmer for 15-20 minutes until the water is absorbed and the bulgur is cooked.

  6. Serve hot and enjoy!
