How To Make Bulgur and Chickpea Soup

A healthy and hearty soup made with bulgur and chickpeas.

Ingredients

  • 1 cup bulgur
  • 1 cup cooked chickpeas
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.

  2. Add the onion and cook until translucent.

  3. Add the garlic, carrots, and celery, and cook for 5 minutes.

  4. Add the bulgur, chickpeas, cumin, and coriander, and stir well.

  5. Pour in the vegetable broth and bring to a boil.

  6. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the bulgur is tender.

  7. Season with salt and pepper to taste, and garnish with fresh parsley.
