How To Make Bulgur and Feta Stuffed Mushrooms Recipe

Savory mushroom caps filled with bulgur, feta cheese and herbs. A perfect vegetarian appetizer.

Ingredients

  • 12 large mushrooms, stems removed
  • 1/2 cup bulgur wheat
  • 1 cup vegetable broth
  • 1/2 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a medium saucepan, bring the vegetable broth to a boil and add the bulgur wheat. Reduce heat and cover. Simmer for 12-15 minutes.

  3. In a mixing bowl, combine the cooked bulgur, feta cheese, parsley, thyme, olive oil, salt and pepper.

  4. Stuff each mushroom cap with the bulgur mixture and place on a baking sheet.

  5. Bake for 15-20 minutes, until mushrooms are tender and filling is heated through.

  6. Serve hot and enjoy!
