How To Make Bulgur Breakfast Bowl Recipe

A hearty and wholesome breakfast bowl made with bulgur, veggies, and eggs.

Serves:

Ingredients

  • 1 cup of bulgur
  • 2 cups of water
  • 1 tsp of salt
  • 2 tbsp of olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 tsp of cumin powder
  • 1 tsp of paprika
  • 4 eggs
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Fresh cilantro, chopped

Instructions

  1. In a saucepan, bring water, bulgur, and salt to a boil. Reduce heat and let it simmer for 15 minutes.

  2. In a skillet, heat olive oil over medium heat. Add onion, red bell pepper, and garlic. Sauté for 5 minutes.

  3. Add cumin powder and paprika to the skillet. Stir to coat the veggies.

  4. Add cooked bulgur to the skillet and mix everything together.

  5. Make 4 wells in the bulgur mixture and crack an egg in each well.

  6. Cover the skillet and let the eggs cook for 5-7 minutes or until they are cooked to your liking.

  7. Divide the bulgur mixture and eggs between four bowls.

  8. Serve with sliced avocado, lime wedges, and chopped cilantro.
