  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup canned crushed tomatoes
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until golden brown.

  2. Add the ground cumin, ground coriander, ground turmeric, ground paprika, and cayenne pepper (if using). Stir well to coat the onions and garlic with the spices.

  3. Add the drained and rinsed chickpeas to the pot, along with the vegetable broth and crushed tomatoes. Stir well to combine.

  4. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the flavors are well blended and the chickpeas are tender.

  5. Season with salt and pepper to taste.

  6. Serve the spiced chickpea soup hot, garnished with fresh cilantro.
