How To Make Lamb & Chickpea Soup

Ingredients
- 1 pound lamb, cut into cubes
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 carrots, sliced
- 1 celery stalk, chopped
- 1 cup dried chickpeas, soaked overnight and drained
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat some oil over medium heat and brown the lamb cubes on all sides. Remove from pot and set aside.

In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent.

Add the carrots, celery, soaked chickpeas, tomato paste, cumin, and paprika to the pot. Stir well to combine.

Return the browned lamb cubes to the pot. Pour in the beef broth and season with salt and pepper.

Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the lamb is tender and the chickpeas are cooked through.

Serve the lamb and chickpea soup hot, garnished with freshly chopped parsley.
