How To Make Bulgur-Stuffed Peppers Recipe

Ingredients

  • 4 large bell peppers, tops removed and seeds discarded
  • 1 cup of bulgur wheat
  • 2 cups of vegetable broth
  • 1 tbsp of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp of cumin
  • 1/2 tsp of paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, bring the vegetable broth to a boil. Add bulgur and reduce heat to a simmer. Cover and let cook for 10-12 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic and sauté until softened.
  4. Add cumin and paprika to the skillet and cook for another minute.
  5. Stir in the cooked bulgur and mix well with the onion mixture. Season with salt and pepper to taste.
  6. Stuff peppers with the bulgur mixture and place them in a baking dish. Bake for 30-40 minutes, until the peppers are tender.
  7. Garnish with chopped parsley and serve hot.
