How To Make Delicata Squash and Farro Risotto Recipe
Creamy, hearty, and loaded with fall flavors, this rich risotto made with delicata squash and farro is the perfect comfort food.

Ingredients
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup pearled farro
- 3 cups chicken or vegetable broth
- 1 small delicata squash, peeled, seeded, and diced into bite-sized pieces
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Instructions

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the onion and garlic and cook until softened and fragrant, about 5 minutes.

Add the farro to the pot and stir to combine with the onion and garlic.

Pour in the broth and bring the mixture to a simmer.

Add the squash to the pot and stir everything together.

Pour in the white wine and stir again.

Cook the risotto, stirring occasionally, until the farro is tender but still has a slight bite, about 35-40 minutes.
