How To Make Three-Cheese Fondue

Ingredients

  • 1 cup Gruyere cheese, grated
  • 1 cup Emmental cheese, grated
  • 1 cup Fontina cheese, grated
  • 2 tablespoons cornstarch
  • 1 clove garlic, minced
  • 1 cup dry white wine
  • 1 tablespoon lemon juice
  • 1 tablespoon Kirsch (cherry brandy)
  • Freshly ground black pepper, to taste
  • French bread, cubed
  • Vegetables (e.g. broccoli, cauliflower, carrots), blanched
  • Apples, sliced

Instructions

  1. In a mixing bowl, combine the grated Gruyere, Emmental, and Fontina cheeses. Toss with cornstarch until well coated.

  2. Rub the inside of a fondue pot or a medium-sized saucepan with the minced garlic.

  3. In the fondue pot or saucepan, heat the white wine and lemon juice over medium heat until hot but not boiling.

  4. Slowly add the cheese mixture, stirring constantly until melted and smooth.

  5. Stir in the Kirsch and season with black pepper.

  6. Place the pot over a fondue burner or on low heat to keep the fondue warm and melted.

  7. Serve the three-cheese fondue with cubes of French bread, blanched vegetables, and sliced apples.
