Ingredients
- 1 flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water)
- 1 large zucchini, grated
- 1/3 cup honey
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 1/2 cup ground flaxseed
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
Instructions

Preheat oven to 350°F.

In a medium bowl, mix the flax egg, grated zucchini, honey, applesauce, and vanilla extract.

In a separate bowl, mix together the flour, ground flaxseed, baking powder, cinnamon, and salt.

Add the dry ingredients to the wet ingredients and stir until just combined.

Pour the batter into a greased 9×5 inch loaf pan.

Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
