Ingredients

  • 8 phyllo pastry sheets
  • 2 cups fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup green onions, finely chopped
  • 1/4 cup butter, melted
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F.

  2. In a bowl, mix together the spinach, feta, green onions, salt, and pepper.

  3. Cut the phyllo pastry sheets into 3-inch wide strips.

  4. On a flat surface brush each strip with the melted butter.

  5. Place a spoonful of the spinach mixture onto the bottom of the pastry strip.

  6. Fold the pastry diagonally to form a triangle shape and repeat until the entire phyllo pastry strip is folded.

  7. Brush the triangles with the remaining melted butter.

  8. Place the triangles onto a baking sheet and bake for 20 minutes or until golden brown.
