Creamy and decadent cheesecake filled with caramel chunks and apple slices, topped with a sweet and tangy apple compote.
Serves:
Ingredients
- 1 1/2 cups of graham cracker crumbs
- 1/4 cup of sugar
- 1/2 cup of unsalted butter, melted
- 16 oz of cream cheese, softened
- 1 cup of sugar
- 1 tsp of vanilla extract
- 3 eggs
- 1/2 cup of caramel chunks
- 1 apple, peeled and thinly sliced
- 1/4 cup of water
- 1/4 cup of sugar
- 1 tbsp of lemon juice
Instructions
-
Preheat oven to 325°F.
-
Mix the graham cracker crumbs, 1/4 cup of sugar, and melted butter together in a bowl. Press onto the bottom of a 9-inch springform pan.
-
In a separate bowl, beat cream cheese, 1 cup of sugar, and vanilla extract until smooth. Add eggs, one at a time, and beat until just combined. Fold in caramel chunks and apple slices.
-
Pour mixture into the crust and smooth out the top. Bake for 60-70 minutes or until the center is almost set. Let it cool in the oven with the door ajar for 30 minutes. Take out and let it cool at room temperature for another 30 minutes.
-
For the apple compote, combine water, 1/4 cup of sugar, lemon juice, and apple slices in a small saucepan. Place over medium heat and bring to a simmer. Cook for 10-12 minutes or until the apples are soft and tender.
-
Let the apple compote cool and spread over the cheesecake just before serving.
