Ingredients

  • 8 oz fusilli pasta
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions, then drain and rinse with cold water.

  2. In a large mixing bowl, combine cooked pasta, tomatoes, cucumber, red onion, olives, and feta cheese.

  3. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.

  4. Pour dressing over pasta salad and toss until well coated.

  5. Chill in the refrigerator for at least 30 minutes before serving.
