How To Make Veggie Fajita Quesadillas
A delicious and healthy blend of vegetables, spices and cheese stuffed inside tortillas.
Serves:
Ingredients
- 4 flour tortillas
- 1 red bell pepper, sliced thinly
- 1 green bell pepper, sliced thinly
- 1 onion, sliced thinly
- 1 zucchini, sliced thinly
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions

Preheat a large skillet over medium-high heat.

Add olive oil and toss in sliced vegetables, chili powder, garlic powder and salt.

Cook for 7-8 minutes until vegetables are tender.

Remove vegetables to a plate.

Place one flour tortilla in the skillet and sprinkle 1/4 cup cheese over half of it.

Spoon 1/4 of the veggie mixture onto the cheese side of the tortilla.

Fold the other half of the tortilla over the veggies.

Cook until cheese is melted and tortilla is lightly browned, about 2-3 minutes per side.

Repeat with remaining ingredients.

Cut each quesadilla into four pieces and serve hot.
