How To Make Grilled Vegetable Skewers
Delicious and healthy grilled vegetable skewers, perfect for a summer BBQ or any time of the year!

Ingredients
- 1 red bell pepper, chopped into large pieces
- 1 yellow bell pepper, chopped into large pieces
- 1 green bell pepper, chopped into large pieces
- 1 red onion, chopped into large pieces
- 8-10 cherry tomatoes
- 1 zucchini, sliced into rounds
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- Salt and pepper to taste
- Wooden skewers, soaked in water for at least 30 minutes
Instructions

Preheat grill to medium-high heat.

Thread vegetables onto the skewers, alternating between each vegetable.

In a small bowl, whisk together olive oil, garlic, thyme, salt, and pepper. Brush the mixture over the skewers.

Grill skewers for 5-7 minutes on each side, or until vegetables are tender and slightly charred.
