How To Make Grilled Vegetable Skewers

Delicious and healthy grilled vegetable skewers, perfect for a summer BBQ or any time of the year!

  • 1 red bell pepper, chopped into large pieces
  • 1 yellow bell pepper, chopped into large pieces
  • 1 green bell pepper, chopped into large pieces
  • 1 red onion, chopped into large pieces
  • 8-10 cherry tomatoes
  • 1 zucchini, sliced into rounds
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for at least 30 minutes


  1. Preheat grill to medium-high heat.

  2. Thread vegetables onto the skewers, alternating between each vegetable.

  3. In a small bowl, whisk together olive oil, garlic, thyme, salt, and pepper. Brush the mixture over the skewers.

  4. Grill skewers for 5-7 minutes on each side, or until vegetables are tender and slightly charred.

  5. Serve hot and enjoy!
